Perhaps it’s Super Bowl, but they seem to be buffalo recipes popping up everywhere. But buffalo chicken doesn’t have to be an acquired taste or unhealthy.

As part of my move to a healthier lifestyle, including working out, using SARMs and supplements, backing it all up with cardio and great diet, I’m also looking at recipes to pass on that are healthy and nutritious. If you’re working out and need protein, this is a fantastic set of recipes.

What you’ll find below are 12 healthier buffalo recipes that I’m not only drooling over right now, but have been actively making and loving over the past few weeks.

1. Buffalo Cauliflower Bites

First up are buffalo cauliflower bites. This is a simple recipe that works in the oven. Just as easily, you could use the modern gadget everyone is talking about, the air fryer. Although they don’t contain meat, they are so crunchy and spicy that you will just absolutely love them.

All you have to do is chop up the cauliflower and bake it for about 20 minutes. Then mix up the sauce and melted butter, pour it over, and then cook for another 15 minutes.

2. Slow Cooker Cajun Buffalo Meat Balls

These are as delicious as they sound. Chicken doesn’t even get a look in here. We are going to use high quality ground beef with onion rolled into balls instead. On their own, or skewered to make Cajun Buffalo meatball kebabs.

You can even serve these are rice or pasta for a complete, new Orleans style meal. It’s a simple as cooking the meatballs in the oven, then pouring over the sauce, and finishing off for another 15 minutes. Add cheese to finish.

3. Ranch Buffalo Devilled Eggs

This is a fantastically creamy and amazing recipe. The mustard and mayo really kicked off, and with creamy ranch dressing, and buffalo sauce, it’s just fantastic.

Peel hard-boiled eggs and cut them in half, remove the yolks, then blend them. Place the whites up on a tray. Add cream cheese, mustard, mayo, and your branded buffalo sauce, and mix well with the yolks. Garnish with crumbled blue cheese.

4. Buffalo Rib Rack Hero

There’s not much to be said here other than it’s an incredible sandwich. You are going to smoke boneless baby backs until tender with plenty of the hot sauce. Then you pile on crusty French bread, with home-made slaw and to be extra decadent some crumbled blue cheese. Just be careful, because this is incredibly messy.

5. Buffalo Chicken Chili

We are going to use ground chicken for this one. Add chili seasoning, good quality tinned plum tomatoes, chicken stock, high-quality buffalo sauce, cannellini beans and cook well.

Cook for around 60 minutes. Garnish the top with diced green onion, crumbled blue cheese, sour cream, and a side of tortilla chips.

6. Grilled Buffalo Chicken Sandwich

This is so basic it’s untrue. You’re literally just slicing good quality chicken breast and grilling it covered in high-quality buffalo sauce. Then you’ll serve it on home-made crusty bread, or a fantastic high-quality baguette.

If I’m in need of a protein kick before I hit the gym, this is a fantastic thing to do. It’s just so packed with protein and goodness, and fills you up. Then I’ll take my energy shake and hit the gym about one hour later.

7. Buffalo Chicken Potato Salad

Buffalo chicken potato salad is no big deal but tastes incredible. You’ll dice the chicken and fry it gently with buffalo sauce liberally applied. Then you’ll create a regular potato salad by boiling the potato, adding everything you’d usually put in a chicken potato salad, and mixing the two together. Garnish with flecks of celery, and even a small pinch of cayenne pepper for a kick.

8. Red Hot Buffalo Chicken Dip

This is a simple and fantastic recipe dunking high-quality buffalo chicken wings into. What are you doing here is mixing ranch dressing, blue cheese, red top buffalo dressing, cream cheese, and diced spring onion together.

It’s an incredibly rich and simple dressing that is perfect for barbecues and summer nights. Don’t just stop with buffalo wings, for vegetarians, it’s great for dipping with vegetables as well.

9. Buffalo Chicken Pizza

This is nothing more complicated than a standard pizza but with buffalo flavored chicken on it. This is thinly diced, and then pan fried with good quality buffalo dressing.

You can really put anything on this pizza you want. I wouldn’t mix it with something like pepperoni, but with things like peppers and onions it’s absolutely incredible, can certainly be the star of the show any summer night gathering, or perfect for the Super Bowl.

10. Buffalo Chicken Stuffed Zucchini Boats

Simple and elegant, these buffalo chicken stuff zucchini boats taste just as incredible as they look.

Thinly slice chicken breast, coat in olive oil, and then season with black pepper and salt. Pan- fry it gently. Then chop it finely. Cut zucchinis in half, and use a melon ball or similar to scoop out the middle. Put the chicken into the boats, then cover in a mix of buffalo and blue cheese dressing. Bake for about 20 minutes.

11. Slow Cooker Buffalo Barbecue Chicken Lettuce Wraps

This is fantastic for leftovers. Just use tortilla wraps. You can buy them or make them really simple at home. Slow cook slice chicken with buffalo sauce and barbecue sauce. Add lettuce to the wrap, alongside some home-made coleslaw, and then serve a generous helping straight from the slow cooker.

12. Buffalo Cauliflower Wings With Blue Cheese Dressing

Roasted buffalo cauliflower wings are a fantastic example of why vegetarians don’t have to miss out on the brilliance of buffalo sauce.

Cut the cauliflower into bite -sized florets. Then add butter, with buffalo sauce, paprika, garlic powder, salt, and a teaspoon of flour. Preheat oven and place cauliflower covered in the sauce in it for about 20 minutes.

For the blue cheese dressing add to it sour cream, cider vinegar, milk, and salt. Heat gently, add chopped spring onion and crumbled blue cheese to the top and serve.
