21, it’s one of my favorite numbers. Why? It’s not that 7 x 3=21 or 7 + 7 + 7 = 21, it has to do with recipes. Yes, recipes do use math, but the Recipe Redux posts today, April 21. I am also excited about numbers because today’s recipe only has 4 ingredients!
The theme this month is to pull a neglected item out of your fridge or pantry and make something healthy and delicious. My neglected item happens to be some tofu that has been staring at me every time I open my refrigerator door. It also happens to be Soy Month too (lucky you)! Before I tell you about this tasty little appetizer that will wow your friends, I want to answer some commonly asked questions about soy.
What is so great about soy, anyway?
Soy is a high quality, plant based protein. 3 ounces of tofu has 8 grams of soy protein. Research has shown 25 grams of soy protein a day can lower blood cholesterol.
Doesn’t it taste like cardboard?
No! Soy comes in many delicious forms, such as tofu, soymilk, edamame, soy nuts, soy nut butter and more.
Will it cause cancer?
No, soy does not cause cancer. Actually, there is supporting research showing the earlier your consume soyfoods in life, the greater cancer reduction risk. Breast cancer survivors can even moderately consume soy.
Isn’t all soy GMO?
No, it isn’t. If GMO’s are a concern for you, look for the Non-GMO label on your soy based products.

Drum roll……..wait for it…………Will it make me grow boobs? (BOOM!)
NOPE! It doesn’t make you grow boobs or lower your testosterone. Even large amounts won’t do this according to clinical research.
Now, for the good stuff. Let’s eat! Trading cheese for tofu saves in calories and fat.
Believe me, you won’t miss the cheese! Since I eat dairy free, these are perfect for me.
- 1 block of smoked tofu
- Fresh Basil Leaves
- 16-20 Grape tomatoes
- Balsamic Vinegar
- Cut tofu into 1 inch cubes.
- Place 1 fresh basil leaf on each cube and top with a tomato.
- Insert toothpick and place each bite on a serving tray.
- Drizzle with balsamic vinegar.
- Bon Appetit!
