I have been on a major quinoa kick lately. Honestly, I could eat it for every meal. I mostly eat it like oatmeal in the morning with banana, walnuts and almond milk. My 3-year-old daughter got really excited about helping me in the kitchen this morning with this recipe. Being the creative 3-year-old she is, she decided to take some of my ingredients and come up with her own creation. I do wish she was more excited about quinoa since it is packed with 14 grams of protein and 7 grams of fiber per 3.5 ounce serving. For now, I will just settle for her being so excited about fruit and the fact that she loves to cook with me.
1/2 cup quinoa, cooked
1 small banana, sliced
1/4 cup fresh blueberries
1 8-ounce container of vanilla yogurt (I use soy or almond yogurt. Greek yogurt would also be an option if you don’t have a dairy issue).
1-2 Tbsp chopped walnuts
Cook quinoa per package directions. I like Ancient Harvest. This takes about 15 minutes. Uncover quinoa and set aside to cool. This doesn’t take long. While quinoa is cooling, slice your banana and wash your blueberries well. When quinoa is cooled, begin assembling your parfait. Start with 1/4 cup of quinoa and layer with sliced banana and blueberries. Add 1/2 container of yogurt and then repeat layering process ending with yogurt. Top with chopped walnuts and any extra fruit.
